After new years, I was still pretty excited about sparkling wine. You would think that following all that sparkling, I might be interested in a nice red or smooth white. No, no, I decided that I’d buy more bubbles. The result? Don Simon Seleccion Brut ended up in my wine cellar. So did it work out for the best?
Sight: A moderate-deep gold with a firm number of small bubbles.
Smell: Minerality, hints of rubber, apple, and pear all get together. Lemon pith joins in, and the nose is pretty flat.
Sip: Fairly moderate in it’s balance between acidity and moderate body. A subtle bitterness prevades throughout, and notes of almonds, minerals, rubber, and lemon pith get play time. The bubbles are soft and fun.
Savor: The bitterness runs through the ending without driving a particular flavor
Don Simon Seleccion Brut doesn’t quite get itself together, and instead comes across bitter. While the color and texture are good, the scent and flavor don’t deliver. If you have to have sparkling, look else where beyond Don Simon Seleccion Brut.
